3 cups Quick-Cooking Oats
Salt
8 Small sized Zip Baggies
Put 1/2 cup oats in a blender and blend on high until powdery. Set aside
in a small bowl, and repeat procedure with an additional 1/2 cup oats.
If you're using a food processor, you can do the 1 cup of oats in one
batch. Put the following ingredients into each zip baggie: 1/4 cup
un-powdered oats, 2 Tablespoon. powdered oats, and 1/8 tsp. salt. Store in an
airtight container.
To serve: Empty packet into a bowl. Add 3/4 cup boiling water. Stir and
let stand for 2 minutes. For thicker oatmeal, use less water - for
thinner oatmeal, use more water.
Variations:
Apple-Cinnamon Oatmeal-
To each packet add 1 Tablespoon. sugar, 1/4 tsp. cinnamon, and 2 Tablespoon.
chopped dried apples.
Sweetened Oatmeal-
To each packet add 1 Tablespoon. sugar or 1 packet 'Equal' artificial
sweetener.
Brown Sugar/Cinnamon Oatmeal-
To each packet add 1 Tablespoon. brown sugar & 1/4 tsp. cinnamon
Oatmeal w/Raisins & Brown Sugar-
To each packet add 1 Tablespoon. packed brown sugar and 1 Tablespoon. raisins.
Health Nut Oatmeal-
To each packet add 2 Tablespoon. any kind of wheat germ
Fruit & Cream Oatmeal
To each packet add 1 Tablespoon. non-dairy coffee creamer and 2 Tablespoon.

Both of these dessert recipes are incredibly easy because they use prepackaged mixes. Just make sure that the mix you choose uses whole grain flour and no processed sugar, also that they contain no incompatible ingredients such as dairy products (cream and butter are okay).
Mix all ingredients together - dough will be fairly stiff. Form walnut-size balls, then flatten them on cookie sheet with a fork to make the traditional criss cross pattern on top.
Bake at 350 for 8-10 minutes, depending on whether you like a softer, cake-like cookie, or a crunchy one.
Prepare pudding according to box directions, but do not allow to set up. Immediately add cake mix and chips, blending together. Batter will be very thick. Pour the batter a large pan and bake at 350 degrees for 30-35 minutes or until the middle springs back when lightly touched. Allow to cool slightly, then cut into squares.
