This is a GHF Healthy Recipe from their monthly newsletter. No UnDiet substitutions were needed except using udon noodles in place of the soba noodles and unrefined sugar in place of the brown sugar that GHF called for.
Makes: 8 cups
Prepare 16 ounces udon noodles according to package directions, drain well, and set aside. Combine in a pan and stir well
Add 1 onion, chopped and 2 tablespoons garlic, minced. Cook for 1-2 minutes. Add and 6 green onions, chopped. Stir and cook for 1-2 minutes.
Add and cook for 1-3 more minutes
Add the prepared noodles and stir well. Add fresh lemon juice to taste and garnish with 1/4 cup cilantro, chopped.
