This dish came about when everybody wanted pizza and I didn't feel like cooking (much) so I gave in. And am I glad I did! This is one of my favorite dishes and led to lots of variations which I'll share with you in upcoming months. I'll put a  icon next to Pizza Night in the Recipe Index when I add new dishes you can make for yourself when everybody else wants pizza delivered.

Eggplant Pizza

Order

pizza with any toppings you want

While you wait for it to be delivered make up the french fried eggplant for yourself. It's really good, but I doubt you'll be able to convince anyone else of that.

Mix in pie plate with a fork

1/4 cup frozen egg substitute or 1 egg

season to taste with sea salt and black pepper

Place in pie plate and using fork prick with holes

1 or 2 slices eggplant, sliced 1/2-inch thick

Melt in saute pan until hot

a little butter

Carefully place 1 or 2 eggplant slices in pan and saute until egg is browned on bottom. Carefully turn and saute until bottom is browned and eggplant is tender. When you test it with a fork it should move through the eggplant as easily as through butter.

When the pizza comes place one eggplant slice on your plate. Using a fork carefully remove cheese and toppings from a slice of pizza. Place it on top of the french fried eggplant.

Leftovers: If you have leftover french fried eggplant and no more pizza you can warm the eggplant in the oven then top it with feta or mozzarella cheese and broil until slightly melted.

Mushroom Pizza

Broil a portabello mushroom about 10 minutes on each side until browned and tender. Using a fork carefully remove cheese and toppings from a slice of pizza. Place it on top of the broiled mushroom. Enjoy!
